Ingredients

    1 cup Chopped Onion
    1 1/2 cups shredded cooked chicken breast
    1 cup (4 ounces) Sargento Reduced Fat 4 Cheese Mexican Shredded Cheese
    1 cup bottled picante sauce
    3 oz. 1/3-less-fat cream cheese
    1 tsp. ground cumin or chili powder
    7 (6-inch) flour tortillas
    1 1/2 cups enchilada sauce

Directions

Preheat oven to 350 degrees.

Place a large nonstick skillet coated with Pam over medium heat until hot.

Add onion and saute 6 minutes until tender

Add chicken, 1/2 c. cheddar cheese, picante sauce, cream cheese, and chili powder. Cook 3 minutes or until cheese melts.

Spoon about 1/3 c. chicken mixture down center of each tortilla, and roll up.

Place enchiladas in a 9"x13" baking dish; drizzle with enchilada sauce and sprinkle with remaining cheddar cheese.

Cover and bake for 15-20 minutes, or until cheese melts.

Serve immediately.

    Everytime I make this I get rave reviews. It is the dish I turn to for potlucks at work and at church (it gives me something I know that I can eat without guilt). It has become a family favorite. A must try. - 12/16/09
