Ingredients:
1/2 cup Chicken stock
2 tbsp Lemon juice
1 tbsp Soy sauce low sodium,
2 tsp Cornstarch
1/4 tsp Pepper, black
2 tsp Vegetable Oil, divided.
Asparagus, fresh, 8 spears cut in 1 inch pieces
1 small sweet red pepper chopped
2 Skinless Chicken Breast cut them in 1 inch squares
Directions
combine first 5 ingredients stirring well. set aside.
place large nonstick skillet coated with cooking spray over medium high heat until hot; add 1 tsp oil. add asparragus and red pepper;; cook, stirring constantly, 2 minutes or until tender. transfer to a bowl; set aside and keep warm.
add remaining 1 tsp oil and chicken to skillet. cook 3 minutes or unitl chicken is browned, stirring occasionally. Add stock mixture to skillet; cook 2 minute or until mixture is thickened and bubbly. Return asparagus mixture to skillet. stir just until coated.
