Great hearty meal that is loaded with vegetables! Great hearty meal that is loaded with vegetables!
Number of Servings: 8

Ingredients

    Ingredients:
    Ground turkey, 1 lb
    Beans, black, 2 cans
    Beans, pinto, 1 can
    Fresh diced tomatoes 1.5 cups
    Hunts Pasta Sauce (no sugar added) 1.5 cups
    Onions,1 cup, chopped
    Green & Red Peppers, 1 cup, chopped
    Chili powder, 1 tbsp
    Ground Cumin, 1 tsp
    Mixed Vegetables, frozen, 1/2 10 oz package
    Water, 2 cups

Directions

Brown the ground turkey in a large pot, drain any fat
then add the onions, peppers, cumin & chili powder. Saute with the browned ground turkey meat until onions are tender, then add all remaining ingredients.
Let simmer on low for about an hour.
Great served with chopped onions, shredded cheese or low-fat sour cream on top & cornbread muffins ...Yum!
