Extra virgin olive oil
2 cups long grain white rice
2 cups water
1/2 bag of frozen red, green, yellow peppers and onions
extra half small onion
1 small can peaches
4 large Tyson's frozen chicken breast,bone less, skinless
lemon pepper
curry powder
nutmeg(optional)
Directions
Place the 4 large chicken breast in microwave and thaw, this usually takes about 5 min. Remove and slice into strips.(It easier and quicker if slightly still frozen) Then slice again into one inch pieces. Lightly sprinkle on lemon pepper and add to skillet with 1 Tbsp extra virgin olive oil.
Cook on med heat, stirring often.
In mediun sized bowl, place 2 cups of long grain white rice, 2 cups water. Stir to mix together. Place in MIcrowave for 9 min. uncovered and on high. When done remove from microwave after one minute and mix together again (optional, one Tsp of margarine) place towel over bowl and let sit.
In smaller skillet add 1 Tbsp. extra virgin olive oil. Take the half an onion and slice. Slice once more for half pieces and place in skillet on med heat. Add 1/2 bag of frozen peppers and onions. Cook until almost soft. Stirring often as well as the chicken. Add 1 small can of peaches in natural juices in with the peppers and onions and let them simmer. at this point turn down the heat to med / low. Add a tsp of curry powder and nutmeg(Optional). and stir.
Once the chicken has cooked for 12 to 15 minutes and is golden brown. Remove from heat. (optional, sprinle with dried small garlic bits.
Uncover rice and stir once more and it is ready to serve.
Remove Stir fry mixture from heat.
In Bowls or on a plate spoon out 1/4 to 1/2 half cup of rice.
Then spoon on chicken (which can be divided between number of people served).
Then spoon on the peppers ,onions, and peaches over that and spoon on sauce which the juice thickens into.
This is colorful and delicious and needs nothing else!
Makes 6 servings with the 1/4 cup rice or 4 with the 1/2 cup rice.
