Introduction

This is about as simple as you can get. Take a package of chicken tenders, a bottle of your favorite tomato sauce, two ounces of Parmesan cheese, and half a box of whole wheat pasta. Voila, reasonably health chicken parmesan (except for the sodium, which surprised me, but you can cut that 'way back by using homemade sauce. This is about as simple as you can get. Ingredients

    1 package raw chicken tenders (sixteen tenders to a package)
    1 bottle of spaghetti sauce
    1/4 cup low-sodium V8 juice
    2 ounces of shredded Parmesan cheese
    1/2 box (6 ounces) whole wheat spaghetti

Directions

Spray the bottom of a 13x9 inch pan with cooking spray. Spread the chicken in the bottom of the pan, and then pour 1 cup of the sauce over it. Sprinkle on the Parmesan cheese and stick in a medium (350 degree F) oven for 40 minutes.

While the chicken cooks, cook the pasta according to the al dente instructions. While that happens, pour the remaining 2 cups of sauce into a pan, rinse the bottle with the V8 (pouring it into the pan as well), and heat it. Pour over the pasta when ready to serve.

Serves 4, with three tenders apiece and about 3/4 cup of pasta.
