Ingredients

    * 4 Green Bananas
    * 2 Eggs Hardboiled
    * Celery, raw, 1 cup, diced
    * Peppers, sweet, red, fresh, 1 cup,
    * Onions, raw, .5 cup, chopped
    * Cucumber (peeled), 1 cup, pared, chopped
    * Green Olives, .5 cup
    * Mayonnaise, regular, 2 tbsp
    * *Dannon fat free plain yogurt, .5 cup
    * *Balsamic Vinegar, .5 tbsp
    * Lime Juice, 1 fl oz

Directions

Boil bananas and eggs. Chill. Chop, mix with other ingredients. Season with dried mustard powder, a dash of cayenne, salt and pepper.

  • Okay, in reading elsewhere online, some say cook bananas with skin on, other say with skin off. I'm not entirely clear that "green" unripe yellow bananas as typical in American stores is really same as Plantains (smaller banana). Being an expat, can you clarify for me please?? Thanks!! - 1/29/17
