Directions
Pre-heat oven to 200 degrees C
Slice and fry the onion, garlic and celery in the oil. Add the mince (ground beef) and brown gently. Add the herbs and tomato puree and leave on a back burner.
Peel, top and tail your marrow and slice in half lengthways. Scoop out the seeds with a teaspoon, leaving a small "wall" at either end so the mince doesn't fall out. Spoon the mince into both halves of the marrow, pressing down to stuff it thoroughly.
At this point juggling skills come in useful, but don't worry if you have two left hands, it's over in seconds. Place both halves of the marrow on a sheet of foil, and quickly flip them so the stuffed bits meet. You'll likely lose a little bit of mince, but not much. Wrap it in the foil, leaving no air gap. Put on a baking sheet and stick in the oven for 20 minutes. It's messy to serve, but so tasty!

Nice and easy, made the basic savoury mince, as usual(with extra allotment veg) and then put it into the prepared marrow. My sauce was a bit runny, but tasted great and the family all ate it - even the kids who didn't want to try it! Will definately be making it again to use my glut of marrows. - 8/15/12
