Number of Servings: 24

Ingredients

    Smart Balance Creamy Peanut Butter
    2 TB unsalted butter
    1 cup all purpose flower
    1/2 cup raw sugar
    1/2 cup dark brown sugar
    1 extra large egg
    1 cup chopped Pecans
    1/4 cup unsweetened applesauce
    .50 tsp Baking Soda
    1 tsp Baking Powder
    .50 tsp salt
    1 tsp vanilla extract

Directions

Preheat oven to 375 degrees
Cream together peanut butter, butter, and sugars for 5 minutes
Add beaten egg and applesauce, vanilla, and continue to cream
In separate bowl, mix together the dry ingredients (except Oats) and toss pecans into the flour mixture to cover the pecans.
Slowly add dry ingredients to creamed ingredients and stop the mixer as soon as batter is blended. Fold in two cups of oats a cup at at time and do not overblend the batter.
Top each cookie with a whole pecan.
Bake 9-10 minutes each.
Makes 24 good sized cookies.
