Introduction

This is a wonderful side dish! We enjoy eating it like a dip with toasted pita bread. This is a wonderful side dish! We enjoy eating it like a dip with toasted pita bread.
Number of Servings: 8

Ingredients

    1 med eggplant
    1 medium onion
    4-5 lg Roma tomatoes
    4-5 cloves of garlic
    4 tbsp olive oil (Approximately)

Directions

Peel eggplant and cut into approx 1 inch cubes. Rough chop onion into about 1 inch pieces. Quarter tomatoes. Leave garlic cloves whole. Combine all vegetables Drizzle liberally with olive oil and toss. (you may wish to use more or less). Spread mixture onto a greased cookie sheet( I use Pam Spray) and bake for 60minutes at 400 degrees or until vegetables are soft enough to mash with a fork.
Transfer vegetable to a large serving dish and mash with a fork. Serve warm or cold with toasted pita bread.
