Ingredients

    1 1/2 lb yukon gold potatoes, washed and cut into 1 inch pieces
    3 medium leeks, sliced and washed
    pam cooking spray
    1/2 cup dry white wine
    4 cups chicken broth
    1/2 cup non-fat greek yogurt

Directions

Preheat oven to 425 degrees.

Place the potatoes and leeks on a baking sheet sprayed with pam. Spray the vegetables with pam. Roast for 45 minutes, stirring occasionally.

Add the arugula to the tray and roast for another 5 minutes, until it is wilted.

Add to a pot and add the wine. Cook down about 5 minutes until the wine has almost evaporated.

Add the chicken broth and bring to a simmer.

Turn off the heat and add the greek yogurt.

Blend with an immersion blender or a food processor until desired consistency.
