Introduction
This is a frittata....serve warm or room temperature... perfect for a brunch item, appetizer (when cut into bite sized pieces) or a picnic! ANYTHING can be added, omitted or switched (except the eggs)...use this recipe to use up all those dribs and drabs that you have in the fridge...adding meat will seriously increase the calorie count, natch...cooked shrimp, crab, or fish can also be added...use a non-stick skillet, and you can omit the olive oil....use a strongly flavoured cheese so you get more flavour and won't be tempted to use more cheese or salt. If you like things spicy, add some hot sauce or chili flakes to the eggs before pouring them over the veggies. Ingredients

1 small yam grated, skin on
8 thin medium asparagus spears, sliced thin
1 cup eggbeaters (or 4 eggs, beaten)
1 small tomato sliced thin and chopped
1 cup cabbage, shredded, and chopped fine
1 tbsp garlic flavoured olive oil
2 tbsp flax seed meal
1.5 oz grated asiago cheese
black pepper, freshly ground
Directions
1) Heat garlic oil in small ovenproof skillet, and saute veggies (for 5-8 minutes), when oil is hot.
2) Add flaxseed, freshly ground black pepper (other herbs may be added at this time also...I like basil in mine), and mix well...saute two more minutea.
3) Sprinkle shredded Asiago over veggies and pour eggbeaters (or 4 fresh beaten eggs) over hot veggies, leave over burner 1-2 minutes.
4) Place skillet in toaster oven/reg. oven (that was preheated to 350 degrees) and bake for 20 minutes.
Makes two huge servings (under 300 calories) or 3 servings for under 200 calories.
