Introduction
This dish is a bit like Spanish rice and can be spicy or not, depending on the spices you use. Use soy/tofu crumbles or just leave the turkey out for a vegetarian dish. Ingredients

1 lb lean ground turkey
1 medium head cabbage, several outer layers removed and then shredded
1 large green (bell) pepper, chopped
1 large yellow onion, chopped
4 medium tomatoes, chopped
10 cloves (1 head) garlic cloves (or use garlic powder)
1 can no salt added kidney beans, rinsed well and drained
4 corn tortillas
Spices, such as
2 t cumin
2 t smoked paprika
1/2 t chipotle powder
1 t thyme
1/4 t ground red pepper
Directions
Brown turkey along with onions, green peppers and whole garlic cloves. When done, pull out garlic and set aside. Drain mixture. While turkey is browning, shred most of cabbage (don't use outer leaves or core), dice tomatoes and combine the two with the drained kidney beans.
Combine browned turkey, onions, green pepper with the cabbage, tomatoes and beans. Mince (or press) the cooked garlic and add with other spices into the mix.
Spray a 9 X 13 glass pan with cooking spray. Slice 4 corn tortillas in half and line bottom of pan with halves (cut edges matched up with straight edges of pan, one at each end, two on each side, two in the middle). Pour in mixture.
Bake at 350 for about 45 minutes until it start to bubble at the sides, pull out and cover with foil and bake another 30 minutes.
Let sit for a few minutes before serving. Serves 8 with side dishes, or 6 generous servings.
