Ingredients

2 tsp olive oil
3 hot italian turkey sausage links, casings removed
1/2 cup diced red pepper
1/2 cup diced onion
2 tsp chili powder
1/2 tsp cumin
1 cup diced tomatoes, drained
1/2 cup black beans, rinsed + drained
3/4 cup pinto beans, rinsed + drained
1/8 tsp black pepper
4 high fiber, low carb tortillas
1/2 cup reduced fat mexican blend cheese
Directions
Preheat oven to 350 degrees. Spray a casserole dish with nonsitck cooking spray.
In a large skillet, heat the oil. Saute the sausage, bell pepper and onion, stirring frequently to break up the sausage, until browned; about 6-8 minutes. Add the chili powder and cumin; cook, stiring for 1 minutes. Add tomatoes, beans and black pepper. Reduce the heat and simmer for 5 minutes.
Please the tortillas on a work surface; spoon the sausage mixture down the center of the tortillas then roll them into cylinders. Place, seam side down in the baking dish; sprinkle with cheese. Bake until heated through and the cheese is melted, about 30-35 minutes. Let stand 10 minutes before serving.
