Introduction

Plain Egg Beaters are tasteless. I like to heat these up to microwave in the morning to get my much needed protein with a little extra flavor. This is becoming a "standard" workday breakfast with a 12 oz. low sodium V-8. Plain Egg Beaters are tasteless. Ingredients

    2 cup egg substitute
    1 cup MorningStar Farms Sausage Style Crumbles, (remove)
    .25 cup chopped Green onion
    4 Sargento pepper Jack cheese sticks, divided evenly into 12 pieces
    Mrs. Dash Fiesta Lime to taste

Directions

Preheat oven to 400. Spray 12 muffin cup pan with non-stick cooking spray. Pour Egg Beaters into muffin cups, dividing evenly. Brown crumbles and green onion, adding Mrs. Dash to taste. Drop about 1 T. into each cup dividing evenly. Add piece of cheese stick into each cup. Bake at 400 for 23 minutes. Each serving = 3 muffins. Makes 4 servings
