A healthy and delicious meatloaf! A healthy and delicious meatloaf!
Number of Servings: 4


    1 lb 99% lean ground turkey
    half a large red bell pepper, chopped
    half of large onion, chopped
    half a 6oz can of tomato paste + 1 tbsp
    1 large egg + 1 egg white
    2 tbsp grated parmesan cheese
    3 cloves garlic


1 loaf = 4 slices
grease loaf pan w pam spray . preheat oven to 350

place all ingredients in bowl.
stir until well incorporated .
place in loaf pan .
spread top of meat w addl 1 tbsp of tomato paste

place in preheated oven. bake for 45 min

    I agree that the red peppers were amazing for this recipe! I also mixed in a cup of fresh chopped spinach. I had never thought much about making a meatloaf without breadcrumbs or oats, but this turned out great without them. We will definitely be making this again. - 6/11/11

  • Tastes great! I had to cook it much longer than the recipe stated though (~1 1/2hrs). Besides that, it looked nice and my high carb family loved it too :) - 3/3/13

  • It tasted good but there was a lot of fatty juice in the loaf pan not sure if it was the can oil spray or what but it grossed me out a little there was saturated fat all over the loaf. If some one could please tell me where I went wrong. - 11/8/11
