Number of Servings: 4

Ingredients

    1 lb 99% lean ground turkey
    half a large red bell pepper, chopped
    half of large onion, chopped
    half a 6oz can of tomato paste + 1 tbsp
    1 large egg + 1 egg white
    2 tbsp grated parmesan cheese
    3 cloves garlic

Directions

1 loaf = 4 slices
grease loaf pan w pam spray . preheat oven to 350

place all ingredients in bowl.
stir until well incorporated .
place in loaf pan .
spread top of meat w addl 1 tbsp of tomato paste

place in preheated oven. bake for 45 min

    I agree that the red peppers were amazing for this recipe! I also mixed in a cup of fresh chopped spinach. I had never thought much about making a meatloaf without breadcrumbs or oats, but this turned out great without them. We will definitely be making this again. - 6/11/11

    The base of this recipe was good, but it was WAY too tomato-y for all of us. I made 3 different versions: one with lots of extra veggies; one as shown; and one pretty much plain for my picky daughter. Texture was good. Next time maybe I'll leave it out and try more egg or cheese. We're low carb. - 3/12/19
