Ingredients

    1 lb. boneless pork chops or pork stew meat
    1 can pineapple tidbits (juice reserved)
    1 green bell pepper cut into chunks
    2 medium tomatoes cut into chunks
    Onions (if desired)
    1 cup ketchup
    1/4 cup vinegar
    2 tsp. corn starch
    1 oz. brown sugar, packed
    3 cups cooked rice

Directions

In hot skillet, brown outside only of pork. Place in casserole dish. In saucepan, mix ketchup, pineapple juice, vinegar, cornstarch, and brown sugar. Bring to a boil and simmer 2 minutes. Pour over pork. Cover with foil.
Cook 45 minutes at 375 (1 hour for pork chops)
Add peppers, tomato, pineapple, onions. Cook additional 30 minutes.

Serve over rice
