Introduction
I buy bagged fresh spinach as a grocery staple. I make this fast side-dish because we love spinach, it's flavorful and it's healthy! I buy bagged fresh spinach as a grocery staple. I make this fast side-dish because we love spinach, it's flavorful and it's healthy!Number of Servings: 4
Ingredients

1 15-oz bag of fresh spinach, washed and dried (not frozen)
1 1/2 Tbsp. olive oil
Directions
Equipment recommended: Wok or deep skillet
Add the olive oil to the wok/skillet.
Peel the garlic by smashing it with the flat end of a chef's knife.
Set the garlic into the skillet and allow to cook on low heat for 3-5 minutes. Discard the garlic.
Add the spinach to the wok/skillet. It will seem like a LOT, but it wilts down to a lot less in the end.
Turn the heat to medium, and stir the spinach every minute or so, until it has cooked down and is wilted. There will be excess water released.
Serve using a slotted spoon do drain the excess moisture.
