Introduction

Frittatas, or baked omelets, are easy, delicious and nutritious, and they can be adapted to almost any dietary needs or specific tastes with a quick swap of mix-ins. I chose to roast some green beans, fry up some turkey bacon and shred some smoked Gouda for this one. Yum! (I listed the frittata as vegetarian, although this one includes bacon, because most frittatas are made without meat.) Ingredients

    4 eggs
    1/2 cup skim milk
    4 slices turkey bacon, chopped and cooked until almost crispy
    1 1/4 cups green beans, roasted and chopped
    4 ounces shredded smoked Gouda cheese
    Salt and pepper, to taste

Directions

Preheat oven to 400 degrees and spray a nonstick, oven-safe skillet; baking dish or springform pan with nonstick cooking spray.

Cook bacon and set aside. Roast green beans (toss in a bit of olive oil, salt and pepper and roast for 15-20 minutes in a 400-degree oven, turning occasionally), chop and set aside. Shred cheese and set aside.

Whisk together eggs, milk and salt and pepper. Add in bacon, green beans and cheese and whisk until all ingredients are incorporated.

Pour mixture into pan and make sure to evenly distribute bacon, green beans and cheese among egg mixture.

Bake for 15 to 20 minutes or until eggs are cooked and top is golden brown. Slide frittata onto cutting board and cut into four wedges. Serve warm.
