Introduction

This is a fairly standard, but sugar-free, apple crisp which uses ivory teff flour instead of regular blended in with the oatmeal. I adjusted a recipe that came with my teffco order. Teff is the smallest grain in the world, and originated in Ethiopia; it's nutrient rich and gluten free. Ingredients

    2 large apples (1 lb.)
    1/2 tsp. cinnamon
    pinch of sea salt
    1/2 C apple cider or juice

    Crisp mixture:
    3/4 C rolled oats
    1/4 C teff flour (I just processed whole grain teff)
    1/4 C maple syrup or sugar
    1/8 C canola or corn oil
    1/2 tsp. cinnamon
    pinch of sea salt

Directions

Preheat oven to 350 degrees.
Thinly slice apples into 9x9 baking pan.
Sprinkle cinnamon and salt over them, and cover with apple juice.
Mix crisp ingredients together in a bowl, and crumble over the apples.
Bake for 30-45 minutes until fruit is soft and crisp is crunchy.
Makes 9 servings.
