Introduction

Yummy (and healthy too!) tomato-based chicken-pasta bake, ready in 20 minutes! Yummy (and healthy too!) tomato-based chicken-pasta bake, ready in 20 minutes!
Number of Servings: 6

Ingredients

    6 oz. pasta (Farfalle {bow-ties} is my favorite; use whole-wheat for extra health benefits)
    2 chicken breasts
    1 cup spaghetti sauce, tomato based
    2 tbsp olive oil
    basil, thyme, or other "Italian" season to taste
    4 oz. dry sherry or brandy

Directions

Begin by cooking pasta as directed.
While water is warming for pasta to boil, lightly sautee' chicken in olive oil.
Add seasoning and sherry.
After chicken is fully cooked, add spaghetti sauce to pan and heat until warm.
Keep warm until pasta is ready.
Drain pasta and rinse with cool water.
Add to deep baking dish.
Pour chicken/sauce mixture over pasta.
Bake at 350 degrees for 5-10 minutes.
Serve with a side of vegetables or a salad for a complete and healthy meal.
Options: Add fresh tomatoes, mushrooms, or other veggies to the sautee' pan while the chicken is cooking or in the baking dish just prior to baking; add cheese prior to baking and remove from oven when cheese begins to bubble. Keep in mind that the calories don't account for these options!

    Very delicious and quick to make. I added sauteed garlic and sliced baby portabella mushrooms at the beginning prior to adding the chicken. I browned the chicken w/italian and no salt seasoning. Also, you can substitue balsamic vinegar for the sherry as I did.
    Terriffic. My family loved it.

    Very good! I added tomatoes, green and yellow peppers and it tasted amazing! But my husband found it a little bland. I added cheese for him but apparently not enough so next time on one half I'll add more. - 6/1/08
