Ingredients

    Vegetable Oil, 2 tbsp
    Curry powder, 1 tsp
    Chicken Breast, skinless/boneless, 4 halves
    Onions, raw, 1 medium (chopped)
    Garlic, 1 clove (chopped)
    Red Ripe Tomatoes, 1 large
    Banana, fresh, 1 small
    Chicken Broth, .5 cup
    Yogurt, plain, low fat, .5 cup

Directions

Heat oil in large skillet. Add curry powder and stir. Add chicken (original calls for skin-on chicken, skin sides down). Chop onion and add. Put garlic through press into skillet. Cook over medium-high heat until chicken is golden brown on one side. Turn and brown chicken on second side. Cut up tomato. Cut banana into small cubes. Add tomato, banana, chicken brother (or water), yogurt, and salt and pepper to taste. Stir; reduce heat and simmer, cover for about 20 minutes, until ckick is tender. Toward the end, if the sauce is too thin, remove cover and cook until thicker.
