Introduction

I created this recipe to disguise the taste of the oatmeal. You can easily add more salsa to give it more flavor also with very little calorie adjustment. My favorite fast breakfast. Ingredients

    2 eggs
    1/4 cup oatmeal
    1/4 cup fresh mushrooms cut up
    1/4 cup spinach fresh and torn
    1/4 cup salsa or to taste
    water
    1/4 cup cheddar cheese or to taste

Directions

Mix all ingredients except the cheese in a microwavable bowl or dish. Add water to make wet about 1/8 of a cup. Put in microwave and cook on high for 2 minutes. Add cheddar cheese to top and microwave about 1 minute longer. Makes one serving.
