Ingredients

1 1/2 cup Progresso Cannellini Beans, canned
3 T Olive Oil
1/2 T Lemon juice
1 small garlic clove
1 tsp fresh Thyme
Pinch Kosher salt
1/4 tsp Pepper
4-8 tortillas (depending on size)
3/4 lb thinly sliced turkey breast
1 large ripe tomato
1/4 medium red onion, thinly sliced
2 oz shaved Provolone or Parmigiano-Reggiano cheese
1 cup Arugula or baby spinach leaves optional
Directions
Combine beans, oil, juice, garlic, thyme, salt, and pepper in the bowl of a food processor. Puree until smooth, stopping to scrape down sides. (can be made and chilled up to two days ahead)
Spread bean spread on one side of each torilla, leaving an inch border around the edge. Arrange turkey down the center of each torilla, layer with onion, tomato, cheese, and arugula. Starting at one end, tightly roll each tortilla. Serve with chips if desire, and, if using large tortillas, cut crosswise in half.
