Ingredients

    Crisco Pure Vegetable Oil, 1 tbsp
    Chicken Thigh, 12 unit (yield from 1 lb ready-to-cook
    Onions, raw, 4 cup, sliced
    Orange Juice, .5 cup
    Campbell's low sodium chicken broth, .5 cup
    Pataks Curry Paste, 2 tbsp
    Garlic, 4 clove
    Ginger Root, 3 tsp
    Flour, white, .125 cup
    Yogurt, plain, low fat, .75 cup (8 fl oz)
    Red Onions, raw, .333 cup, sliced thin
    Lime Juice, .125 cup
    Coriander leaf, dried, 2 tbsp

Directions

Heat oil
Brown Chicken
Add to Slow cooker.
Drain fat

Fry onions in pan until soft
add to slow cooker

combine juice, broth, curry, garlic and ginger then, add to slow cooker

Cook on low for 4 - 6 hours.

When finished, scrape onions off chicken. With slotted spoon, transfer chicken to platter, remove skin if desired, cover and keep warm.

Whisk flour with 1/4 cup of water then whisk into slow cooker. Cover and cook on high until thickened. About 15 mins. Pour over chicken.

Meanwhile, sprinkle red onion slices with salt and let stand for 15 mins. rinse then pat dry. In a small bowl mix onions with lime juice and yogurt then sprinkle with coriander. Top each serving of chicken with this mixture.
