Ingredients

    2 cups whole wheat pastry flour
    1 cup organic sugar
    1/2 tsp. kosher salt
    1 TBSP. baking powder
    PLUS to be added to mix but not included in nutritional info:
    1 c. milk of choice
    2 eggs
    1/4 c. oil or cooled melted butter

Directions

Preheat oven to 500 degrees.
Mix dry ingredients well in a large bowl.
Mix milk, eggs and oil/butter together. If you are adding moist mix-ins like pumpkin, banana or apple sauce, reduce the amount of milk by 1/4 c. Add to the wet ingredients.
If you are adding dry ingredients such as fresh fruit, chocolate chips, or nuts add to the dry ingredients.
Make a well in the dry ingredients and add all the wet ingredients. Mix the two for no more than 20 seconds! It is okay for there to be patches of dry ingredients amongst the wet.
Line muffin pan with liners. Scoop batter into liners to 2/3 to 3/4 full. For best results, use all the batter right away. Put muffin tins into the oven and IMMEDIATELY REDUCE HEAT TO 400 DEGREES. Set timer for 20 minutes. This method will produce the high peaks and crunchy texture so sought after in muffins.

Remove from oven. Cool. Enjoy.
