Introduction

Ingredients

12 shallots
6 chicken breasts
225g bacon
head of garlic
bottle red wine
salt, pepper
bouquet garni
1oz butter/margarine
1oz flour
Directions
serves 6
-Peel shallots, fry whole for 5 mins in the oil, then add whole button mushrooms, chopped garlic and chopped bacon and cook for 5 mins more then remove them from pan.
-Sear/flashfry/brown the chicken breasts in the leftover oil.
-Re-add the mushrooms,shallots garlic and bacon and add the bottle of red wine
-Reduce the heat, cover and simmer for 30-45 mins
-Towards the end of cooking time, mix the butter and flour together with your fingers to make a sort of roux (beurre manie) and once the flour and butter and well mixed in, add the pot and cook for ten more mins to add thickness and a bit of extra flavour.
Serve with mashed potatoes or rice or roasted root veg - up to you:-)
