Ingredients

2 cups whole wheat flour
¼ cup wheat germ (or us ¼ cup whole wheat flour)
1 teaspoon baking soda
½ teaspoon salt
1 ½ cup mashed ripe banana
¼ cup vegetable oil
¼ cup honey
2 eggs
1 teaspoon vanilla extract
Vegetable cooking spray
Directions
Combine flour,wheat germ, baking soda, and salt in a large bowl; make a well in center of mixture. Combine banana, oil, honey, eggs, and vanilla; add to dry ingredients, stirring just until moistened.
Coat a 9 x 5 x 3-inch loafpan with cooking spray. Spoon batter into pan, and bake at 350 F for 3- 45 minutes or until a wooden pick inserted in center comes out clean. Yield: 1 loaf (about 118 calories per ½-inch slice)
Bananas can be prepared in advance and frozen for this recipe. Buy them by the bag on sale at the grocery store. Place ¼ cup bottled lemon juice in a blender container and blend peeled bananas until the container is full of banana puree. Pour the bananas into plastic containers, seal, and freeze until ready to use.
