    4 medium baking potatoes
    1/4 cup 2% milk
    1/4 tsp salt
    1/8 tsp pepper
    1/2 cup blue cheese crumbles
    3 medium scallions, chopped

1 lb chicken breast, cut into bite sized pieces
    2 cloves garlic, chopped
    1/4 tsp salt
    1/8 tsp pepper
    1/4 cup hot sauce

Bake the potatoes at 400 until tender.
Allow to cool enough to be able to handle.
Cut each potato in half and scoop out the inside being careful to leave the shell intact.
Mash the potatoes
Mix the milk, salt, pepper, scallions, and blue cheese crumbles with the mashed potatoes.
Return the mashed potato mixture evenly to the 8 halves of potatoes.
Bake at 400 for about 5 minutes or until the cheese melts and the top crisps slightly.
Meanwhile, in a large nonstick skillet cook the chicken breast with the salt, pepper, and garlic until the chicken is cooked through.
Remove from the heat, add the hot sauce, and mix to coat.
To serve place two twiced baked potato halves on a plate and top with 1/4 of the buffalo chicken mixture.
If desired top with a dollop of sour cream and serve with carrot and celery sticks (not in nutritional information).

Good eating! I used bleu cheese salad dressing in the mashed potatoes instead of milk, etc. I like it hot, so I added extra hot sauce. - 8/30/11

This has become a family favorite. I can get away with making it once a week. I have to use a less hot sauce, like Tiger Sauce, to accomodate my husband's heat sensibilities. - 8/3/10
