Ingredients

2 boneless, skinless chicken breasts (about 3 oz each)
3 tsp dijon mustard
2 tbsp balsamic vinegar
1 tbsp honey
3 tbsp extra virgin olive oil
1 can (15 oz) pineapple chunks (save juice)
Directions
1. Mix dijon mustard, vinegar, honey and 2 tbsp of olive oil in a small bowl until well blended.
2. Place chicken breasts in a large ziploc bag, add mustard mixture, place in fridge and allow to marinate at least 30 minutes (I like to allow it to marinade all day).
3. Preheat oven to 350*.
4. Heat 1 tbsp olive oil in skillet over medium-high heat.
5. Brown chicken breasts in skillet.
6. Place chicken in baking dish, pour pineapple chunks over chicken.
7. Add pineapple juice to remaining marinade (from bag) , pour over chicken & pineapple.
8. Cover and bake at 350* for about 30 minutes or until chicken is cooked through.
