1 Package (17 ounces) Fully Cooked Beef Pot Roast In Gravy
1 pound Roma Tomatoes, cut into 1/2-inch piece (about 2 cups)
1 cup frozen or fresh corn kernels
1/2 cup BBQ Sauce
1/3 cup coarsely chopped fresh cilantro leaves
1 teaspoon cornstarch
30 stone ground white tortilla chips, coarsely crushed into 1 1/2 cups
1 cup shredded four cheese Mexican cheese blend
Directions
1. Preheat broiler with oven rack about 4 inches from source of heat. Heat pot roast in microwave one as label directs.
2. Spray 12-inch broiler-safe skillet with cooking spray. Drain jus from beef into skillet; add tomatoes and heat to boiling over medium-high heat. Boil 4 to 5 minutes until tomatoes become soft and mixture thickens. Shred beef using two forks. Stir beef, corn, barbecue sauce, cilantro and cornstarch into tomato mixture; heat until mixture boils and thickens slightly.
3. Sprinkle tortilla chips over beef mixture, then sprinkle with cheese. Place skillet under broiler and broil 1 to 2 minutes or until cheese melts and top is golden.
