Introduction

I make this all year round for protein and fiber content, but is great for barbeques and summer parties. I make this all year round for protein and fiber content, but is great for barbeques and summer parties.

Ingredients


    2cups Black Beans

    2cups Red Kidney Beans

    2cups Pink Beans

    2cups White Beans

    1/2cup chopped Green bell pepper

    1/2cup chopped Red bell pepper

    1/2cup chopped Red Onion

    2tbsp. Extra Virgin Olive Oil (or to taste)

    3tbsp. Balsamic Vinegar (or to taste)

    1tsp. Salt (or to taste)

    1tsp. Black Pepper (or to taste)

    1 clove garlic minced

Directions


1.Strain beans well. and rinse with cool water. Chop onion and peppers.

2.Combine EVOO, Balsamic Vinegar, garlic, salt & black pepper. Mix well.

3.Combine all ingredients in a bowl. (I add a packet of Goya-Salad and Vegetable Seasoning to give it a kick)

4.Cover. Refrigerate until cool.

5.Enjoy!!! Makes approximately 12 one cup servings
