Ingredients

    1/2 pound butternut squash, peeled and cut into chunks
    1/2 pound boneless skinless chicken breast, but into chunks
    1 small green bell pepper, but into chunks
    3 Tbsp salsa
    5-oz canned diced tomatoes, undrained
    4 tsp golden raisins
    1/8 tsp cumin
    dash of ground nutmeg
    1/2 clove garlic, pressed
    dash of ground cinnamon
    5-oz canned garbanzo beans, rinsed & drained

Directions

In a crock pot, combine all ingredients except garbanzo beans. Cover and cook on low for 7-8 hours. 15 mins before you are ready to serve, turn crock pot to high and add garbanzo beans. Cover and cook until beans are heated through.

    I liked it for the first day. DH didn't like it at all. Leftovers didn't re-heat so well. - 2/23/11

    Yes, this is definitely not a second day meal! I guess I'm just lucky not to have such a picky DH, lol. A lot of people don't like garbanzo beans, so I might try it next time with baby potatoes and see how it turns out.
