Ingredients

    • 1 cup old-fashioned oats
    • 3/4 cup whole-wheat flour
    • 1/4 cup milled flax seed
    • 2 teaspoon ground cinnamon
    • 1/2 teaspoon nutmeg
    • 1/4 teaspoon salt
    • 1/2 cup honey
    • 2/3 cup unsweetened applesauce
    • 1/4 cup olive or canola oil
    • 1 egg, beaten to mix
    • 1 egg white
    • 1/2 cup chopped dried chopped dates
    • 1/2 cup dried cranberries
    • 1/2 cup finely chopped walnuts
    • 1/4 cup unsalted sunflower kernals

Directions

Preheat oven to 350 degrees F. In a medium bowl, whisk together the oats, flour, flax seed, cinnamon, nutmeg and salt.
In another bowl, whisk together the honey, applesauce, oil, egg and egg white until well combined. Stir in the oatmeal mixture until well combined. Add the dried fruit and walnuts.
Coat an 8-inch square baking pan with olive oil using a brush. Spread the mixture into the prepared pan, sprinkle sunflower kernals on top and bake until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool completely and cut into 9 bars.
