Ingredients

2 cups Egg Beaters
1 cup diced extra lean ham (I buy a single 1/2 inch slice from the deli counter)
1 cup diced bell pepper, red or green
1 cup Kraft fat free shredded cheddar
1 cup shredded colby jack
Non calorie butter flavored cooking spray
Directions
Preheat oven to 350.
Mix all ingredients together in a bowl. Coat a 12 cup muffin pan with cooking spray. Use a tablespoon or ladle to evenly distribute mixture into each cup of the muffin pan. Bake for 20 minutes or until a knife inserted in center comes out clean. Cool and serve.
Makes 12 servings, nutrition info is calculated per egg cup.
These can be either refrigerated or frozen for later use.
