Introduction

An easy and lower calorie version of a fancy dish!! I use one chicken breast and split it into two servings, but it can easily be doubled or tripled. I usually serve brown rice and steamed vegetables for a side dish. An easy and lower calorie version of a fancy dish!! I use one chicken breast and split it into two servings, but it can easily be doubled or tripled. I usually serve brown rice and steamed vegetables for a side dish.

Ingredients

    One chicken breast (approximately 5 oz before cooking)
    1 wedge laughing cow original or garlic herb**
    2 oz of thin sliced or shaved ham
    1 1/2 Tbls grated parmesan cheese
    1/2C italian bread crumbs
    Non stick cooking spray

    ** Lite cream cheese can by substituted.

Directions

Combine bread crumbs and parmesan in shallow dish and set aside. Place chicken breast in freezer bag, or in between two pieces of plastic wrap. Pound the chicken until approximately 1/4 inch, spread with laughing cow cheese (you might want to warm up the cheese a little so it spreads easier.) Place ham over cheese, and roll up the chicken breast and secure with a toothpick if necessary. Sprinkle bread crumb/parmesan mix over chicken, or roll chicken in mix, making sure all sides are covered. Spray lightly with non stick cooking spray, and bake for 35 - 40 minutes.
