Introduction

Very low fat, trimmed down the amount of sugar but still extremely sweet because of the raisins and butterscotch chips. This only makes a small batch because I have found that when I make a larger sized batch, I eat them all. Coking them in a muffin pan keeps them from spreading out too thin so they stay very moist. Ingredients

    2/3 cup all purpose flour
    1/4 teaspoon cinnamon
    1/4 cloves
    1/4 teaspoon nutmeg
    1/8 teaspoon salt
2 and 1/2 tablespoons unsweetened applesauce
    1/2 cup brown sugar
    1 egg white beaten
1/3 cup chopped apples with skins
    1/3 cup raisins
    1/3 cup butterscotch chips

Directions

Preheat oven to 350 degrees F (175 degrees C). Lightly brush muffin pan cups with peanut oil to decrease chances of sticking (if desired).
In a medium bowl, sift together flour, baking soda, cinnamon, cloves, nutmeg, and salt add oats and stir to combine. In a large mixing bowl mix applesauce, sugar and egg white. Stir in flour mixture, and mix thoroughly. Fold in chips, apples, and raisins.
Drop by rounded tablespoon into prepared muffin cups. Bake for 12 to 14 minutes. Cool on wire rack.
