Ingredients

4 Medium Tomatoes, thinly sliced
4 Medium Zucchini, thinly sliced
2 Bell Peppers, red yellow or green, thinly sliced
4 Medium Onions, thinly sliced
2 Medium Egg Plants, thinly sliced
6 Tablespoons Pesto Sauce
1 Package fresh Mushrooms, thinly sliced
Several Cloves of Garlic, minced
1 Cup, chopped fresh parsley
Olive Oil
Fresh Ground Black Pepper
Fresh Romano or Parmesian, Grated
Now like the word THIN...
Directions
Preheat oven to 400 degrees
Arrange sliced vegetables in two baking pans
In a bowl mix the Pesto, Garlic, Olive Oil and Pepper
Brush Mixture over Vegetables
Sprinkle with Parsley
Bake 35 minutes
then BROIL to char slightly
Serve emdiately over whole wheat pasta (angel hair)...
