Introduction

Number of Servings: 4

Ingredients

    4 thin (Italian style) Chicken breasts (1 lb. total)
    2 C Special K cereal (crushed down to 1 C)
    2 t garlic powder (or garlic salt)
    2 t onion powder
    2 t McCormick Original Chicken Seasoning
    2 t parsley
    2 egg whites (you won't need it all, but it is easier to dip the chicken in two than one)

Directions

Preheat oven to 400 deg. F

Crush Special K, then combine with spices in a Ziplock bag, close the bag and shake until mixed.

Beat the egg whites slightly and then dip the chicken breasts into the egg white.

Put the chicken breasts into the Ziplock bag, seal, and shake until coated thoroughly.

Spray a non-stick pan with cooking spray, and then place the four pieces of chicken on the pan.

Cook for 20 - 25 minutes. Will feed four unless you have a husband like mine that eats two of the chicken breasts.

I served with green beans with slivered almonds, and baked potato for a healthy meal.
