Ingredients

    2 (8 ounce) sweet potatoes
    1 clove garlic, pressed
    1/2 teaspoon salt
    1/2 teaspoon ground nutmeg
    1 egg
    2.5 cups whole wheat flour

Directions

1. Peel sweet potatoes. Place in microwaveable container that is filled with 1/4 cup water.Cover container with plastic wrap and microwave for 6 minutes, or until potatoes are soft.
2. Mash potatoes. Blend in garlic, salt, nutmeg, and egg. Mix flour in, a little at a time, until you have a soft dough (more or less flour may be necessary)
3. Boil water.
4. While water prepares to boil, roll the dough into long snakes. Cut into 1-inch sections. Drop the pieces into the boiling water. Gnocchi is done when it floats to the surface. Remove the floating pieces with a slotted spoon.
5. Serve with butter or cream sauce.

    The Gnocchi came out a bit dry. Next time I will cut back on the amount of flour I used, but otherwise very tasty! - 3/18/08
