Ingredients

    3 cups thinly sliced sweet onion
    8 cups spinach
    1/2 tsp salt divided
    1 1/3 cups fat free milk
    1cup egg substitute
    1/4 tsp black pepper
    1/8 tsp red pepper
    dash paprika
    12 ounces French bread, cut into cubes
    3/4 cup drained crumbled firm tofu (water packed)
    1 cup shredded fontina cheese

Directions

Heat a large nonstick skillet (sprayed with cooking spray) over medium heat. Add onions and cook for about 12 minutes, stirring frequently, until browned. Add spinach, cook 5 minutes until wilted. Stir in salt. Cool. Combine remaining ingredients through bread and stir to coat. Place half of bread in bottom of prepared (cooking spray) 11 x 7 baking dish, layer with tofu, half of spinach mixture,1/2 cup of cheese, remaining bread mixture, remaining spinach mixture and cheese. Cover with foil coated with cooking spray and refrigerate overnight or 8 hours. Let sit for 10 minutes before baking. Preheat oven to 350. Bake covered for 30 minutes, uncover and bake 15 minutes or until set. Set out for 10 minutes before serving.
