Ingredients

    2 T canola
    1 med onion chopped
    5 med carrots chopped
    2 c. frozen corn
    1 c. uncooked rice
    2 c. water
    1 2/3 c. shredded chedder cheese

Directions

Put canola oil in sauce pan
put in onions till clear
add in rice till white
add 2c. water
boil then set aside
boil carrots till tender
add in corn
dump rice and veggies in 9 X 13 pan
add cheese and season how you like
and mix
stick in oven at 400
till cheese melted
