Ingredients

    2 oz. of canola oil in large pot
    1 cup chopped onion
    3-4 cloves garlic, minced
    1/4 jabanero pepper
    3-4 sprigs of fresh thyme added to hot oil
    Cook until onions are clear.
    Add chicken and start to brown
    Add curry powder
    Add potatoes
    Add about 1-2 cups of water and simmer until sauce is thickened.
    Salt to taste.
    Serve with rice.
