Introduction

This is super yummy and lighter than regular hummus because I left out the tahini. I use a whole head of garlic (yes, you read that right) but if you have to interact with others you can use less. Ingredients

    I - 15 oz. Can Garbanzo Beans (I used Westbrae Organic)

    Juice of 1 lemon

    1 T. Olive oil

    1 head or 6 cloves garlic, peeled

    1/4 t. salt

Directions

Rinse and drain garbanzo beans. Place all ingredients in a food processor bowl fitted with the knife blade. Process till almost smooth (a few lumps add character but you could process till completely smooth if you like).

I like to eat this on a whole wheat flatbread with a bit of feta cheese, finely chopped green onion and parsley and lots of lettuce. Yum! A lot to eat for not a lot of calories!!
