Healthy waffles, with oats substituting for flour. Make in a food processor or blender. If you don't have buttermilk on hand, don't worry -- just use milk in its place. Ingredients

    Oatmeal, quick cooking, 2 cups
    Canola Oil, 1 tsp
    Egg, fresh, 1 large
    Baking Powder, 2 tsp
    Buttermilk, lowfat, 1/2 cup
    Milk, nonfat, 3/4 cup

Directions

Pre-heat waffle iron.

1. Place oats in blender or food processor. Blend/pulse until oats look like flour (it will be courser than flour).
2. Add baking powder & pulse to blend.
3. Add Egg, oil, buttermilk and milk. If you don't have buttermilk use milk in its place. Blend well.
4. Spray waffle iron with non-stick cooking spray.
5. Cook waffles.
6. ENJOY!
