Number of Servings: 4

Ingredients

    2 small sweet potatoes
    .5 cup non-fat Greek yogurt
    salt and pepper for taste

Directions

Peel and chop sweet potatoes, place in medium sized sauce-pan and cover with water. Boil until potatoes are soft enough to mash. Drain potatoes, add yogurt, salt, & pepper. You can either mash with potato masher, or for a really good consistency, mix in a food processor.

    So healthy... so yummy... I added a bit of butter... probably a 4th of a cup for a little more rich flavor because I was serving it to other people, and they loved it. I whipped it for a long time and then put it in a piping bag and piped them into little fluffs, then I twice baked them in the oven. - 6/17/12
