Ingredients

    1 1/2 C Wild Rice
    1/2 C Fresh Parsley (chopped)
    1 Medium Onion
    3 C Butternut Squash (cubed in 1/2 inch)
    2 Granny Smith apples (cubed in 1/2 inch)
    1 Tbsp Thyme (dried)
    1 C Vegetable Broth
    1/2 C Slivered Almonds
    4 -5 Grilled Chicken Breasts (optional)

Directions

1. Cook wild rice (according to instructions)
2. Heat olive oil in large skillet
3. Saute onions until transluscent
4. Add squash, apples and thyme. Saute 5 minutes.
5. Stir in vegetable broth.
6. Combine cooked rice, parsley, and saute'd mixture into a 9" x 13" baking dish.
7. Sprinkle slivered almonds on top.
8. Bake at 450 degrees for 20 - 25 minutes.

Serves 10

Optional: Serve with grilled chicken
