Introduction

This recipe was adapted from a cookbook the "Town, Trails & Special Times - The Marlboro Country Cookbook". It's filled with wonderful chili's and other cowboy food. YUM! Ingredients

    1/2 lbs Raw Shrimp (21-30 Count)
    2 cloves garlic
    1 tsp. Kosher Salt
    1/2 tsp. Black Pepper
    1 tsp. Ground Cumin
    1 tsp. Dry Crushed Oregano
    2 tbsp. EEVO (extra virgin Olive Oil)

    *Optional 1c. Lime Juice (6-8 limes)

Directions

Mash garlic and seasonings together, add olive oil. Pour over shrimp and mix to evenly distribute. Marinate for 30 min (can be more). Grill over hot coals or broil until done (approx. 3-4 min per side).
Serve with grilled veggies or over a salad with Pica de Gayo and a little bit of sour cream.

This was originally meant for Flank or Skirt steak (2lbs). For steak or chicken you rub the meat with the marinade above, place meat in a glass dish and then pour 1 c of fresh lime juice over it and let sit 30 min before grilling.
I like this with the shrimp and omit the lime juice because the acid will cook the shrimp before it gets to the grill...

    I use jerk seasoning or all purpose seasoning [Jamaican style] to marinate my shrimp before grilling and it is fantastic. - 1/29/11
