Ingredients

    3 3/4 Cups of Water
    1 to 1.5 lbs boneless skinless chicken breast cut in chuncks
    2 cubes chicken bouillon
    1.5 tsp. lemon pepper
    1/4 tsp. oregano
    1/8 tsp ground cumin (optional)
    1.5 tsp minced garlic (fresh)
    1.5 cups chopped onion
    1 Tbl. margarine
    2 (11 oz) cans white shoepeg corn, undrained
    2 (4.5 oz) cans chopped green chilies undrained
    3 (15.5 oz) cans white northern beans undrained
    1 to 1.5 Tbl. lime or lemon juice

Directions

Place chicken and water in pan; bring water to a boil and cook chicken chunks on medium/high for 30 min.

Meanwhile, saute onion and garlic in butter. Placed cooked chicken an remaining water, onion/garlic, corn, chilies and beans in crock-pot. Cook on low settings 8-10 hours or on high settings 4-5 hours. Add lemon juice 1 hour before serving.

Serve with shredded cheese (cheddar or Monteray jack) crumbled white corn tortilla chips and/or a dollop of sour cream. NOTE: chips and sour cream not part of the nutrition calculations.
