Ingredients

4 Large Eggs
1 1/3 cups egg whites, or 4 large eggs, white only
Spinach, fresh or frozen, about half package or 2 cups fresh
Broccoli, one large stalk cut up in 1/8 inch cubes
Cheddar cheese, about 2 ounces
Onions
Garlic
Salt to taste
Directions
Pre-heat oven to 350 degrees
Cube pre-steamed broccoli stems, saute in cast iron pan over medium to medium high heat. Turn down heat if starting to burn. DO NOT ADD BROCCOLI CROWNS.
Add about a 1/4 cup of sliced or cubed onion. Add raw or frozen spinach. Allow water to reduce.
Add broccoli crowns. Its best if you separate them into florets of no larger than 1/2 inch. Be careful no to overcook, and do not stir too much to avoid turning them into mush.
Add ham. There should be no need to add extra salt to the veggie mixture, and the ham should provide more than enough. Turn off the heat, add about 5 small cloves of garlic and mix in gently
Beat the egg mixture in a blender until foamy. Add about a 1/2 teaspoon of salt or salt substitute.
Move skillet to oven and allow to cook until set. Top should be lightly browned and the mixture should rise somewhat like a souffle. Add grated cheese and return to oven until melted.
