Trying to capture more healthy veggies in my diet - this makes a wonderful start to my day. Omit the leftover tater tots and save 50 calories and 14 grams of carbs. Ingredients

    1/4 cup egg substitute
    1 tablespoon chopped onion
    2 tablespoons chopped green pepper
    1 1/2 teaspoon canola oil
    3 grape tomatoes
    3 baby carrots, finely chopped
    3 left over tater tots

Directions

Makes one serving.

In a small nonstick skillet, saute chopped veggies in oil to desired doneness. Add tater tots to cooking veggies.

Add egg substitue and allow to set enough to flip omelet. Add 1/2 slice of colby jack cheese to the top and serve.
